Spring Home Salad
A lovely salad to add to your rotation. It has so many amazing nutrients in it. pickled shallots, leafy greens, protein from quinoa etc. Makes you feel amazing!
-1 head of lettuce
-1 cup cherry tomatoes
-pickled shallots (3 shallots mixed with apple cider vinegar and set aside)
-handful of pumpkin seeds
-1/2 cup cooked quinoa
-Tahini dressing
-herbs on hand
-1/4 cup feta cheese
