Hard boiled eggs and crunchy slaw

I love this lunch combo so much! It’s the perfect combo of when you are feeling like breakfast but also want something fresh and crunchy lunch vibes. Delish!

-2 hard boiled eggs ( I like to boil mine for 8 mins and then add to an ice bath)

-1 cup shredded green cabbage

-1/2 cup shredded carrot (or you can shave the carrot into ribbons)

-1 green onion chopped

-handful of pumpkin seeds

-shaved parmesan (measure with your heart)

- dressing: 2 tbsp evoo, juice of 1 lime, 2 tbsp apple cider vinegar

combine all the salad ingredients and toss with the dressing. Add the salad and eggs to a plate and add in some sliced avocado if you wish! Enjoy!
