Edamame Soba Bowl

This lunch is a great meal prep option. Make a big batch of this and keep in your fridge when you want an easy lunch or afternoon snack!

-1 package of soba noodles (cook according to package)

-1 cup frozen edamama

-2 Persian cucumbers sliced

-2 green onions

2 tbsp sesame seeds

dressing: 2 tbsp sesame oil, juice of 1 lime, 1 tbsp coconut Amino

Cook your soba noodles according to the package. At the last 2 mins of boiling add in your frozen edamame and then drain everything. add all the ingredients to a bowl and drizzle the dressing on top. Enjoy!
