Vermicelli Noodle Stir Fry with Veggies
I love cooking up noodle dishes they are my absolute fav! It’s so easy to cook these noodles all you need is boiling water. While thats boiling you can cook up all the veggies in one pan it’s so easy and tastes amazing.
1 pack vermicelli noodles (you can buy these at any asian markets or in whole foods)
-1 pack snowpeas
-1 bell pepper (sliced thinly)
- 5 shitake mushrooms (sliced)
-1 green onion (chopped)
-2 tbsp coconut aminos
-2tbsp sesame oil
-1tbsp tamari (gluten free)
-optional toppings: (sesame seeds, cilantro, red pepper)
cook noodles according to instructions. Meanwhile, place a large pan on medium heat and add sesame oil. Place all the veggies in the pan and cook till they are soft. I added minced garlic and ginger in here as well but you can add in whatever you like. Add in the other oils and sauces and allow all the ingredients to cook together. Once the noodles are done add those to the pan and add a bit more coconut aminos and lastly sesame seeds and any other additional toppings. Enjoy!
