Balsamic Kale Salad with sourdough croutons
This salad is so tasty and is perfect for spring/summer. The sourdough croutons and a lovely addition with the balsamic glaze.
-2 cups curly kale
-1/4 cup sun dried tomatoes
-1/2 red onion chopped
-1 toasted piece of toasted sourdough chopped into squares
- chopped basil leaves
-1 chopped Persian cucumber
-olive oil, salt, pepper, balsamic glaze
Process: Chop the kale and add to a bowl. Massage the kale with lemon and olive oil. Next toast the bread and then chop into cubes. Assemble the salad with the rest of the ingredients and add a drizzle of balsamic reduction on top. Enjoy :D
