Healthy Tuna Farro Salad
This is a fun healthy twist to use up those tuna cans you have stored in your home. This one has fresh veggies, farro, and lots of lemon! It’s great as a quick lunch or as a side to a main dish :D
1/2 cup farro (I like bob red mills)
2 kale stems (chopped)
2 celery sticks (chopped)
1/2 red onion (chopped)
1 garlic clove minced
bunch of cilantro (chopped)
Cook farro according to instructions. Chop up all the veggies and add to a bowl. Mix in the farro and then add a splash of olive oil, squeeze of 1 lemon and lots of black pepper and tiny pinch of salt. Serve up!
