Macho bowl with spicey tahini sauce

Macho Bowl with roasted potatoes, black beans, spinach, kale, and a spicy tahini dressing to go on top. This is a great combination of healthy carbs, protein, and greens. Recipe below!

Serves 2:

- 8 yellow small potatoes chopped

- lacinato kale

-spinach

-1 can black beans

-hemp hearts (optional)

-tahini dressing: favorite hot sauce, tahini, olive oil, apple cider vinegar, maple syrup, salt and pepper

Start by preheating your oven to 400 degrees F and place your chopped potatoes on a baking sheet lined with parchment paper. Toss the potatoes in a bit of olive oil, salt, pepper, and oregano. Roast in oven for 30 mins till they are nice and crispy. Set aside to cool.

Using a pan, saute the kale, spinach, and broccoli till nice and wilted down and add your black beans. You can use olive oil here as well and then I added a bit of coconut aminos as well to the mix.

Once that has been cooked, make your spicy dressing! Add all the ingredients to a mug and mix together. assemble bowl and enjoy :)
