Vegan Tacos

I love tacos and am always trying to switch up what goes inside. These are spicy, crunchy, and just the perfect weeknight dinner. Literally took minutes!

Ingredients:

-corn tortillas

-vegan cheese ( I like Violife Mozzarella)

- mircro greens

- 1 head romaine

-can of pinto beans (drained and rinsed)

-1 jalapeno thinly sliced

-add on favorite hot sauce

Process: First heat a pan on medium and place your corn tortillas with a bit of cheese on top to allow to melt. While those are warming up, drain and rinse your pinto beans and set aside. Once your cheese tortillas are ready, add on the beans, shredded romaine, micro greens, and jalapeno. Top with your favorite hot sauce and enjoy :D
