Simple Salmon

Dinners like these are my favorite. Lots of greens and a nice piece of fish. I love cooking the fish in the oven and then throwing the greens together while it cooks. It literally takes 15 mins and you have a bomb dinner for yourself!

Ingredients

-1 -2 salmon filets

-broccolini

-handful of arugula

-shredded carrot

-micro greens

-sesame seeds

-coconut aminos

-olive oil

-lime

-soy sauce

-red chili flakes

Process

Start by preheating your oven to 400. Place the salmon and broccoli on a parchment lined baking dish. Season both the broccoli and salmon with coconut aminos, olive oil, salt, pepper, soy sauce, and red chili flakes if you like.

Bake in the oven for 15-20 mins. If the broccolini is starting to char, take it out and allow to cool on a plate while the salmon continues to bake. Next, assemble the salad and add the lime, more coconut aminos, olive oil, and a pinch of salt. Once the salmon is done, remove the skin and add everything to a plate. Enjoy :D
