plant power dinner

-1 Japanese sweet potato

-handful of arugula

-1 zucchini

-handful of broccoli

-1/2 cup cooked quinoa

-choice of hummus

-shaved parmesan

heat oven to 425 and bake chopped sweet potato wedges with olive and salt for 35-45 mins flipping half way through. Pan fry zucchini and broccoli with olive oil, lemon, salt, pepper till slightly browned. Add all veggies, quinoa, hummus, and parmesan to your plate and top with olive oil and lemon. Enjoy!
