Summer Peach & chicken salad
This is summer in a bowl! It’s shredded zaatar chicken and peach salad. The flavors are perfect together and is the best post beach meal!
-3 boneless skinless chicken breast
-zaatar seasoning
-salt, pepper, evoo
-handful of spinach
- 1 cup chopped tomatoes
-1/2 red onion sliced or chopped
-1/2 fennel sliced or chopped
-2 peaches sliced
-1/4 cup walnuts chopped (optional)
-1/4 cup cilantro chopped
dressing: evoo + balsamic vinegar
preheat your oven to 400F and line a baking sheet with parchment paper. Season your chicken with all the seasonings and drizzle some evoo on top. Bake in the oven for 30-35 mins or until internal temp is 165. While the chicken cooks, make the salad! Combine all the ingredients in a bowl and drizzle with evoo and vinegar. Once the chicken is done, shred with 2 forks. Add the chicken to the salad and enjoy!
