GF zaatar chicken tenders & apple slaw
craving chicken tenders and wanted to add a little healthy spin! So, I found flaxseed flour and it turned out great! These were quick, delicious, and hit the spot!
- 4 boneless skinless chicken breasts or 1 lb chicken tenders
-1 egg
-2tbsp unsweetened almond milk
-1 cup flaxseed flour
-4 tbsp zaatar seasoning
-1tbsp paprika
-salt and pepper to taste
Slaw: 1 cup cabbage, 1 green apple sliced thin, sliced parmesan, 1/2 cup shredded carrot, chopped herbs (any you have on hand)
dressing: 2 tbsp evoo, 1 lime, 2 tbsp apple cider vinegar
Start by preheating oven to 400F. Line a baking sheet with parchment paper. Start by patting your chicken dry and if you need to cut them into small strips. Next make your stations (dry and wet) combine the egg and almond milk into one bowl and whisk together. Combine all the dry ingredients into a bowl. Start dunking your strips into the wet bowl and then the dry bowl making sure they are coated. Add all the chicken pieces to your baking sheet and bake in the oven for 30-40 mins till the chicken is fully cooked.
Make the slaw by combining all the ingredients and finishing it with the dressing.
