Salmon & navy beans

this is a great dinner when you are towards the end of your groceries at home. This is minimal ingredients but packed with protein and flavor.

- 1 salmon fillet

-1 can drained and rinsed navy beans

-handful of spinach

-handful of tomatoes chopped in half

-1-2 garlic cloves chopped

-1 lemon

- 2 tbsp grainy mustard

-handful of herbs on hand ( I had parsley)

preheat oven to 400 degrees. Pat the salmon dry and season the salmon with salt, pepper, olive oil, squeeze of lemon and spoon over the grainy mustard. Bake in the oven for 20 mins till cooked through. Meanwhile, pan fry the beans, tomatoes, garlic, spinach, leftover lemon in olive oil for a few mins. Once the salmon is done, add the ingredients from the pan to a plate and place the salmon on top. Add your fresh herbs and enjoy!
