Healthy Blueberry & Banana Pancakes

I make these for one of my clients weekly! They are a lovely indulgence BUT they have healthy ingredients so it’s a win win. You can make these GF(which I did for this recipe) or you can use whole wheat flour.

ingredients

-1 mashed banana

-splash of almond milk (or any plant milk)

-2tbsp maple syrup

-2tsp cinnamon

-1/3 cup oat, almond, brown rice or whole wheat flour

- 1tsp baking powder

-1tsp baking soda

-1egg

Process

combine the dry ingredients first and then fold in the wet ingredients. Mix together till there are no lumps. I like to add extra banana slices and blueberries if on hand. Lastly, heat up a frying pan with coconut oil and add a spoonful of the batter to the pan. Fry on each side for a few minutes till cooked through. Add maple syrup, almond butter, extra fruit, and enjoy!
