thumbprint pb cookies
I love love love these cookies! They are filled with strawberry chia jam and are perfect for when people come to stay!
-1/2 cup coconut sugar
-7/8 cup all purpose flour
-1 tsp baking powder
-1/4 cup peanut butter
-1/4 cup almond milk
-1 tbsp melted coconut oil
chia strawberry jam: 1 cup frozen strawberries 2 tbsp chia seeds, 1tbsp maple syrup - combine in a saucepan and cook down till it turns to jam
preheat oven to 350F and line a baking tray with parchment paper. combine all dry ingredients in a bowl and then add in the wet ingredients and stir to combine. Form small cookies in your hand and place on baking sheet. Taking your thumb, press down to form an indentation. Place a spoonful of Jam in the center and bake for 12 mins till the cookies are golden! Leave the tray to cool for a few minutes and enjoy!
