Carrot Ginger Soup
Carrot ginger soup is great for the immune system and has bursting amount of flavor. I make it for clients often when they need a little reset and want something anti-inflammatory as well.
-4 chopped carrots
-1 onion chopped
-1-2 thumbs ginger (grated)
-vegetable stock
-3-4 cloves garlic (minced)
cook everything in a pan until it’s soft. Transfer to a blender and blend until smooth. Top it with cooked chickpeas or red chili flakes.
