Quinoa Tabbouleh
This is the meal prep salad. It’s fresh and healthy and keeps in the fridge for a few days which is such a life saver
-1/2 cup cooked quinoa
-1/2 persian cucumbers chopped
-1/2 red onion chopped
-1-2 roma tomatoes finely chopped
-handful of mint, cilantro, basil (chopped)
-dress with lemon, evoo, red wine vinegar and lots of black pepper
