Baked Berry Oatmeal
-1.5 cups rolled oats
-2 tbsp flax meal + 5 tbsp water
-1/2 cup almond milk or any plant milk
-1/4 cup maple syrup
-1/3 cup nut butter
-1/4 cup chia seeds
-1tsp baking powder
-1/4 tsp salt
-1 cup frozen or fresh berries
preheat oven to 350 and coat an 8x8 baking dish with coconut oil. In a bowl, combine the flax meal and water and whisk together and let sit for 5 mins. After add in all your wet ingredients and then the dry. Place the mixture in the baking dish and bake for 20-30 mins till the top is a bit golden brown. Enjoy!
