egg and squash breakfast salad

An energizing and nutrient breakfast or lunch that will keep you satisfied for hours

-2 soft boiled eggs

-roasted squash (I used leftovers here but you can used any potato as an alternative)

-goat cheese (omit or use any cheese on hand)

-dollop of pesto (or hummus!)

-handful of arugula (or any other leafy green)

-dill (use any herb you have on hand)

boil eggs for 8-10 mins and then cold plunge them and take off the shell. Assemble salad with whatever ingredients you feel like using and enjoy with a nice pinch of salt!
